Brewing vessel
The porcelain-brewing vessel allows easy filling with coffee grounds and water due to its conical format. The shape facilitates manual agitation as well as cleaning, either by hand or in the dishwasher. The vessel is custom hand made by a family owned company in Bavaria/Germany and guarantees timelessness, food safety and pure taste.
Collar
The collar is made of solid and food safe silicone, in accordance the FDA and EU standards and is dishwasher safe. It holds the brewing vessel on the cup providing an airtight seal between both components. An air duct is integrated into the collar where the manual pump can be connected.
Manual Pump
The manual pump is used to evacuate the volume beneath the brewer, pulling the water through the coffee bed. Before taking cuptimo off the cup, the negative pressure has to be released. This can be done by pressing the button on the pump.
Filter paper
To be able to guarantee the necessary quality and taste, solely companies that manufacture in compliance to German quality and food safety standards have been considered. Several filters have been tested but the filter papers choosen for cuptimo stood out by its taste characteristics. cuptimos filter paper is manufactured in Switzerland, using Alp spring water in a non-circulatory process, which avoids negative taste effects on the coffee.
How it works
First, a filter paper disk is placed in the brewing vessel and rinsed with some brewing water so that it adheres to the bottom. The cuptimo brewer is placed on top of a cup or a carafe with a level top lid. This is necessary to enable the negative pressure to be build up for accelerated extraction.
Cuptimo is a full immersion brewer. All the brewing water can get in contact with the coffee at the same time. To improve even extraction, the slurry can be agitated with various methods through the top opening of the brewing vessel. Cuptimo allows to use finer grind sizes than other filter brewing methods, ranging from 2 to 20+ clicks on the Comandante Grinder. To start the vacuum extraction, the hose of the manual pump is connected to the collar. Depending on the surface condition of the cup it may be necessary to apply some pressure from top so that all gaps close and the negative pressure can be established. Once all the coffee is in the cup, the vacuum can be released by pushing the button on the manual pump for taking off the brewer
Properties and advantages
Full flavor because of zero-bypass vacuum extraction: As all brewing water is pulled through the full height of the coffee bed, an even, efficient extraction is achieved and the occurrence of channeling is minimized. Reduced bitterness and astringency through the reduced brew time and because all water has to pass through the full height of the coffee bed, effectively filtering out the big coffee compounds causing astringency.
Grind size according to taste preference: Most brewing methods require a specific grind size to work properly. Cuptimo offers the possibility to choose grind size of a very wide range (2 to 20+ clicks on the Comandante Grinder). Finer grinds make it easier to extract light roasts as well as producing an even extraction as the particle size variation is reduced. Full immersion brewing. Achieves exceptional high extraction yields (TDS:1.8+, EY28+). In general sweeter, more balanced cups with reduced bitterness and astringency.
