To keep more flavour in the cup, we’ve partnered with Zurich University to create the Paragon, a tool which dramatically increases retention rates and maximises the potential of the brewing process.

Resulting from years of extensive research, the tool has been scientifically proven to capture and express up to 40% more key aroma volatile molecules than an identical brew without chilling – flavour that would otherwise be lost to the environment.

Layers of innovation
The chilling rock is a core component of the Paragon. Constructed from food-grade stainless steel and coated with a layer of highly durable titanium, its spherical shape and large surface area allow for even and rapid chilling. Offering greater thermal capacity, the high-density liquid gel centre maintains colder temperatures for longer, and freezes faster than hollow or water-filled alternatives.

Adjustable height
Height-adjustable to accommodate different cups and coffee machines and is designed with anti-slip grips.

Chilling for espresso
The 30mm diametre chilling rock size is smaller than our Paragon Filter rocks and has been designed to suit espresso coffee with extra rocks available to order too.

We recently discovered the significant role of volatile aroma compounds in how we interpret and which flavors we can perceive. By brewing with Paragon Pour-Over Brewer, we utilize Extract Chilling technology to capture that flavor otherwise lost in the environment.

Extract chilling technology of the Nucleus Paragon pour-over brewer was researched at Coffee Excellence Center in Switzerland by Professor Chahan. Further more , many other professionals developed and tested it to bring excellence to your brewing approach.

NUCLEUS PARAGON ‘s CHILLING ROCK
Nucleus Paragon is designed to effectively extract a pour-over of any size. It is made of a metal casing that holds freezing solution liquid to increase the time the rock is frozen. The chilling rock should be at freezer temperature (below -5 degrees C) and used within 10 minutes of pulling out of the freezer, given they have reached an equilibrium frozen temperature in the freezer over time.

What we may think of as Jasmine is, in fact, a combination of different compounds coming together and reminding us of Jasmine. Nucleus Paragon retains up to 40% volatile aroma compounds maximizing your beverage’s flavor potential.

Why is temperature so important?
Sensitivity of taste changes at different temperatures. Each taste receptor has its own zone of sensitivity. For example, our hot tactile receptors peak sensitivity at about 45°C and our sweetness around 37°C.
