Nitro System Cleaning & Maintenance Upon Install:
Make Sure to run Citrus Draft Line Cleaner through your new system prior to serving customer drinks
Weekly Stout Faucet:
Remove tip on stout faucet & ensure that all 5 holes in restrictor plate are open & equal in size. Soak tip & ristrioctor plate in soda water for 5 minute then rinse. Verify that all 5 holes are open & free of debris.
Kegerator and Draft Tower:
Clean and wipe down with food safe cleaner.
Bi-Weekly:
The system should be flushed bi-weekly. This means running Citrus Draft Line Cleaner through the system.
• Fill an attached keg with one gallon of water
• Add 4-6oz of Citrus Draft Line Cleaner to the keg
• Run through the system and stop when you see the solution
• Let the system sit for 15 minute
• After the 15 minutes, dispense the remaining
• Fill the keg with an additional gallon of warm water
• Flush the system using the gallon of warm water
Filtering Cold Brew:

Filter Bag- This is like a large tea bag for the coffee grounds during the brewing process. Filter bags provide highly filtered cold brew & easy clean up
Filtering When Kegging:
When your cold brew is done brewing, the next step is kegging. Consider using a filter during this process. A filter is very effective in reducing particles.
In Line Beverage Filter:
This is small screen Filter that is installed in the beverage line, between the keg and the nitro Infuser. The cold brew passes through the filter as it leaves the keg. This filter requires a daily cleaning. Oftertertimes the In-Line Filter is used in addition to one of the above option. Failure to filter your Cold Brew will impact your dispensing system.
How to use Citrus Draft Line Cleaner?
• Fill a keg with one gallon of warm water.
• Add 4-6oz of Citrus Draft Line Cleaner to the gallon of water that is inside the keg
• Run through the system until the solution dispenser. Close the faucet once you see the solution.
• Let the system sit for 15 minutes to allow the solution to properly work.
• After the 15 minutes, dispense the remaining gallon through the system.
• Fill the keg with an additional gallon of warm water.
• Flush the system using the gallon of warm water.

GRAVITECH. The solution to obtain a perfect brew ratio
We did not want to offer a technology to “explore”, but a system that can instantly solve the problems of a coffee shop. Gravimetric technology is just that: it guarantees a perfect espresso coffee made with maximum precision by ensuring total control at all stages of extraction. The barista just has to set the weight of the liquid in the cup for each blend. Simple, right? Today, gravimetric technology installed on the professional VA388 coffee machine means that each espresso coffee can be made with the same ratio, ensuring a consistent brew.
With gravimetric technology, the weight of the liquid extracted is measured directly in the cup. The data is therefore much more precise and, more importantly, is not affected by other factors, such as the shape of the filter, the tamping force on the coffee, the condition of the showerheads and more. The barista always has full control of each delivery, the quantity in the cup is always programmed and any difference between one delivery and the next is eliminated.

The VA388 Black Eagle is the espresso machine for all of those who dedicate their lives to coffee; who study, research, and experiment every day to bring a meaningful coffee experience to the cup. A coffee machine for the specialty coffee shop, a machine that is stable, consistent and volumetric. In the continuous search for a constant result in the cup, many baristas have verified and demonstrated how the volumetric system allows them to obtain a significantly higher quality repeatable product compared to the manual system. The volumetric version of the VA388 Black Eagle addresses this need and goes beyond. We wanted to create a coffee machine for specialty baristas, making a volumetric model with the greatest temperature stability to help baristas in their daily work. We wanted the new machine to improve the relationship between customer and barista. The designer Viglino adopted a soft style, with more curves and asymmetrical elements, in a product 49 cm high.

But how? Again, through studies, research and experimentation, as well as working with the best baristas, we managed to find a solution that provides for the control of every single parameter. Thus was born T3, a technology that allows the barista to set three temperatures: for the brewing group, the water infusion and the steam.
