For one day only, Mariam Erin and Form Roastery present an intimate, championship-inspired coffee Omakase in Al Ain.
Created for curious coffee drinkers, this guided experience invites you to discover coffee beyond the usual café menu one course at a time.

Leave the Selection to Mariam
Omakase means leaving the selection to your host.
There is no menu to choose from and no need to decide what to order. Mariam selects the coffees, preparations, and serving sequence, revealing each course only when it is ready to be experienced.
Every course introduces a different expression of coffee through its flavour, aroma, texture, and presentation.
All you need to bring is your curiosity.
Three Courses, Revealed One at a Time
Mariam will guide you through three signature, non-alcoholic coffee courses:
- Black: A carefully prepared course centered on clarity, character, and origin.
- Milk-based: A warm, expressive course that explores another side of coffee.
- Signature Beverage: A refreshing signature creation designed to introduce the experience.
Each course is prepared and served in a considered sequence inspired by Mariam’s competition creations.
You will not know exactly what is coming next and that is part of the experience.
Meet Mariam Erin
Mariam Erin is a multiple national coffee champion and the 2023 World Cezve/Ibrik Champion.
Known for transforming coffee into creative, competition-level experiences, Mariam brings her knowledge, imagination, and distinctive approach to an intimate Omakase table.
Throughout the session, she will personally guide you through each course and the ideas behind it.
Hosted at Form Roastery
This one-day experience will be hosted at Form Roastery, a specialty coffee roastery and café established in Al Ain in 2022.
Created as a space for coffee and community, Form Roastery provides the setting for Mariam’s intimate three-course Omakase.
For one day, the space takes on a new form as Mariam curates the coffee, guides the experience, and reveals each course.
